The problem is that they didn't build it back in the day, in part because of stupid protectionistic/business reasons (who can blame them, the field was new, digital principles not well understood yet) and also because the technology was lacking and in it's infancy. The more interesting question is why nobody builds anything like they did in our day. It's like we've totally given up, for questionable reasons.

Also, with multiple people in a video call using the proprietary software and server of a company, storing the recording on the servers of another company (unlisted or "private"), supported by a proprietary operating system of yet another different company, trusting that each participant has a secure-enough system that no trojan spies on the mic/audio/screen, that's only semi-"private" at most. And then there's the afterlife, who knows which participants recorded the session or downloaded it, stored it onto their computers or online storage, and where that will end up if those are hacked or die and pass hardware/passwords on to their heirs, etc.
